Just last week, I shared with you that President’s Choice had released their brand new PC® Insiders Collection™ with over 70 new items for the holiday season. They had challenged me to take part in their #PCDishOut campaign where I had to make and create dishes with some of the items from the line.
Now because I was feeling so inspired, not only did I create one recipe but I created two recipes! These recipes fall into the Brunch and Dinner categories from the new PC® Insiders Collection™ line. I will ensure to list all the items you need to purchase. The best part about both of these recipes – you can make and prepare them in 30 minutes or less. If you’re me (a person on the go, go, go), you need recipes that are quick & easy!
Recipe #1 – The Decadent Chocolate Cherry Loaf French Toast
What you will need:
1 loaf of PC The Decadent Chocolate Cherry Loaf
1 bottle of PC Smoky Bacon Flavoured Maple Syrup
2-3 eggs (depending on the number of slices you’ll be making)
1 teaspoon of vanilla
1/4 cup of milk
Beat egg and vanilla in shallow dish. Stir in milk.
Dip PC The Decadent Chocolate Cherry Loaf in egg mixture, turning to coat both sides evenly.
Cook bread slices on lightly greased nonstick griddle or skillet on medium heat until browned on both sides.
Drizzle with PC Smoky Bacon Flavoured Maple Syrup as necessary.
Recipe #2 – Cream of Sweet Potato & Leek Soup
What you will need:
1 bag of PC Strawberry Blonde Potatoes (use only 3-4)
1 package of PC Mini Sweet Potatoes (use only 3-4)
1 package of PC Black Label Jamon Ibérico Dry-Cured Ibérico Ham
1 tablespoon of butter
2 leeks, roughly chopped
3 cups of chicken stock
1.5 cups of cream
Heat butter slowly in pan till melted. Add chopped leeks and cover, cooking slowly for about 5 minutes.
Add PC Strawberry Blonde Potatoes and PC Mini Sweet Potatoes and cover, cooking slowly for another 5 to 10 minutes till soft.
Pour in stock and bring to the boil. Simmer for 10 to 15 minutes.
Chop up 1 package of PC Black Label Jamon Ibérico Dry-Cured Ibérico Ham.
Take hand-blender and slowly puree.
Once done, slowly whisk in 1.5 cups of cream.
Dump in the Jamon Ibérico Dry-Cured Ibérico Ham, for an extra salt kick.
